An easy breakfast that is full of protein and hidden veggies AND kids gobble it up? Yes please! Make these muffins before your trip (or for an easy breakfast in the car for busy school days!), and you’ll have a quick and nutritious breakfast on the go! These are made with Kodiak Cake mix which has protein in it, and I blend in a little spinach (hence the “monster”) to sneak in some more good stuff. This recipe makes 40 mini muffins, and I typically double or triple it since my kids devour these.
You’ll need:
- Muffin pan or mini muffin pan (my kids prefer mini muffins!)
- Cooking spray
- 2 cups Kodiak Cakes mix
- 3/4 cup milk
- 1/2 cup brown sugar
- 1/4 butter, melted
- 2 very ripe bananas
- 1 egg
- 1 tsp cinnamon
- 1 tsp vanilla
- Couple handfuls of spinach (about 2-3 cups)
Preheat oven to 350ºF. Spray muffin pan with nonstick spray. Add Kodiak Cakes mix and cinnamon to large mixing bowl. Add bananas, milk, melted butter (make sure not piping hot), vanilla, brown sugar, and spinach to blender. Blend until spinach is finely blended in to the other ingredients. Pour contents of blender into dry ingredients in the large mixing bowl. Stir gently and add the egg, stirring gently again to combine. Spoon into muffin tin and bake mini muffins for 9-11 minutes, regular muffins for 16-18 minutes. Let cool and enjoy! Refrigerate muffins to last longer. Makes 40 mini muffins. Enjoy!
