our favorite granola

I make a big batch of this (along with our favorite Monster Muffins) before our camping trips. Delicious by itself as a snack or with Greek yogurt! This is the basic recipe, so add in whatever you like – nuts, dried fruit, chocolate chips, etc!

Ingredients:

  • 4 c old fashioned rolled oats
  • 1 cup pepitas
  • 1/2 tsp cinnamon
  • 3/4 tsp salt
  • 1/2 c olive oil
  • 1/4 c honey
  • 1/4 c maple syrup
  • 1 tsp vanilla

Instructions:

  1. Preheat the oven to 350ºF. Line a large rimmed baking sheet with parchment paper.
  2. Mix oats, pepitas, cinnamon, and salt together in a large mixing bowl. Add olive oil, honey, maple syrup, and vanilla and stir until well combined and all oats and pepitas are covered.
  3. Pour onto prepared pan and use a spoon or spatula to spread granola evenly on pan.
  4. Bake for 8-10 minutes, remove from oven and stir. Pat down evenly on pan with spatula again, and bake for an additional 8-10 minutes or until granola is golden.
  5. Let granola cool completely, then transfer to an airtight container for storage.
