I make a big batch of this (along with our favorite Monster Muffins) before our camping trips. Delicious by itself as a snack or with Greek yogurt! This is the basic recipe, so add in whatever you like – nuts, dried fruit, chocolate chips, etc!
Ingredients:
- 4 c old fashioned rolled oats
- 1 cup pepitas
- 1/2 tsp cinnamon
- 3/4 tsp salt
- 1/2 c olive oil
- 1/4 c honey
- 1/4 c maple syrup
- 1 tsp vanilla
Instructions:
- Preheat the oven to 350ºF. Line a large rimmed baking sheet with parchment paper.
- Mix oats, pepitas, cinnamon, and salt together in a large mixing bowl. Add olive oil, honey, maple syrup, and vanilla and stir until well combined and all oats and pepitas are covered.
- Pour onto prepared pan and use a spoon or spatula to spread granola evenly on pan.
- Bake for 8-10 minutes, remove from oven and stir. Pat down evenly on pan with spatula again, and bake for an additional 8-10 minutes or until granola is golden.
- Let granola cool completely, then transfer to an airtight container for storage.
